  1. Add quinoa and water to the pan and pour until it boils. Reduce the warmth to low, cover and simmer until it is soft and the maximum liquid has been absorbed (~ 15 minutes). Once cooked, shake with a fork.
  2. When quinoa is cooking, upload your water spinach into a large bowl. Add olive oil, lemon juice and salt and rub it down with your fingers for one minute. You will feel the kale fibers melt and crumble, developing kale that is soft to eat.
