I’m gonna move in advance and let you know that this quite probably can be the simplest broccoli salad recipe your face will ever need. And once I say quite probably, I imply genuinely. Because it’s…perfect. Did I simply say that? I simply stated that. I don’t use that word lightly!

Whether you do or don’t like mayo or mustard or marshmallows or butterflies, I’m fairly sure this can be a winner for your e book.


Broccoli salad and I go way again. I have vivid recollections of my mother bringing it home from Heinen’s when I turned into in high school. I’d devour it right out of the container regardless of how desperately she desired me to place it in a bowl. What a tough toddler I turned into.

Ingredients
For the dressing:

  • 3/4 cup uncooked cashews, soaked
  • 1/4 cup water
  • 2 tbsp natural maple syrup
  • 2 tbsp apple cider vinegar
  • half of tsp mined garlic
  • heaping half of tsp sea salt
  • Freshly ground black pepper

For the salad:

  • 2 huge broccoli crowns (florets handiest), finely chopped
  • 1 half cups purple grapes, halved
  • 1/three cup roasted salted almonds, finely chopped
  • 3/4 cup diced red onion
  • 1/three cup dried cranberries or raisins


Steps

  1. Place cashews in a bowl. Cover with water and soak for 2 hours or in a single day. If you've got a Nutribullet or excessive pace blender, sincerely soak them in warm water for 10 mins.
  2. Drain cashews. Add to blender with with rest of the dressing elements. Blend until completely smooth and creamy.
  3. Place broccoli, grapes, almonds, purple onion, and dried cranberries in a medium or large mixing bowl. Add dressing and toss throughly to coat. Season with salt and pepper to flavor. Serve chilled.
